A special Ume-shu (plum sake) made of Junmaishu matured with pickled plums (Ume). After the first year they replace the plums with fresh ones to let it mature for another year. This creates a sweet ume-shu with a rich texture, not unlike a dessert wine. This Ume-shu won the Silver prize in the sake category at the 2018 Japanese National Plum Sake Fair and won awards for 3 consecutive years at the Alberta Canadian Fair.
