Description
En is a bold, full-bodied junmai sake made with Shiga Asahi rice, polished to 80%. It's brewed using the traditional kimoto method, with no added yeast, relying instead on naturally occurring wild yeast for fermentation. The rice is grown without pesticides, and the sake itself is made with soft spring water drawn from the Suzuka mountain range.
Rich and dry, with a good amount of acidity, En has real depth and character. It's traditionally enjoyed warmed and then allowed to cool slightly (known as kanzamashi), which brings out a gentle, comforting warmth as you drink it. It goes well with just about any dish!
