Bon Time is a new style of sake, crafted using traditional Japanese sake-making techniques. Building on their experience with junmai (pure rice) sake, Fukucho have incorporated shiro-koji (white koji) and lactic acid bacteria to create a bold flavor that pairs well with Japanese cuisine as well as spicier dishes from other culinary traditions.
This sake focuses on balance: refreshing citrusy acidity, natural sweetness from rice fermentation, and a slightly lower alcohol content for easy drinking. Acidity, umami, and smoothness come together in harmony.
It pairs especially well with spicy dishes like mapo tofu or tom yum kung, but we'd love for you to discover your own favorite pairings too.
