Made from Kyoto's historic Iwai rice polished to just 88%, this sake celebrates the character of the grain in its most natural form. Despite the low polishing ratio, it remains surprisingly elegant, offering layers of toasted grain, roasted nuts, fresh herbs, and deep umami.
