This sparkling version of Junmai Seafood has undergone a secondary fermentation in the bottle, where residual yeast and sugars produce a generous amount of natural CO₂. This complex Junmai sake offers a broad spectrum of flavours and nuances, from grapefruit-like acidity to notes of anise and a pure mineral character. On the nose, expect inviting aromas of elderflower, cedar, and koji rice.
