Maruhi is Hiraizumi Honpo's experimental take on traditional yamahai brewing. Using Kyokai No. 77 yeast, which naturally produces high levels of malic acid, it combines the depth of the yamahai method with a remarkably bright and juicy character. Notes of crisp green apple, citrus, and fresh pear are balanced by gentle rice sweetness and layered umami, creating a vibrant, full-bodied sake with exceptional freshness.
