Crafted from organically grown Wataribune rice, this junmai reflects Matsuno Tsukasa's deep commitment to sustainable farming and biodiversity around Lake Biwa. Made exclusively from organically grown Wataribune rice cultivated in Shiga Prefecture, the sake is brewed without added yeast, relying instead on kuratsuki (naturally occurring) yeast and the classic kimoto method. The result is a sake with quiet depth, natural energy, and a sense of place that unfolds gently across a wide range of temperatures.
